Former Vogue Editor Kirstie Clements has joined Hilton Brisbane’s Executive Chef Jeremy Clark to create a special 3-course menu #thebrisbanetaste for the month of March at the award-winning Vintaged Bar + Grill. Kirstie is also narrator and Executive Producer of the Queens Plaza documentary, ‘Uncovering the Brisbane Look’.
Sometimes, the link between couture and cuisine may seem contentious but that hasn’t stopped Roberto Cavalli, Gucci, Armani or Trussardi from opening restaurants and cafes in some of the world’s chicest cities. In Brisbane, the Hilton invited Kirstie to collaborate to design a fresh, organic and fashion inspired menu. The vibrant colours of the best local produce make each dish a fashion statement.
The menu starts with a dazzling combination of salmon sashimi, pink grapefruit, seaweed and ocean trout roe. The main of rib eye of lamb with – zucchini flower, peas, panisse of polenta, red vein sorrel and dotted with a romesco sauce is autumn on a plate. Dessert matches the finest local strawberries with yoghurt sorbet and raspberry juice. The tipple? A Vintage Chambord Kir Royale with Chandon Sparkling and a twist.
