40 Days of Flavour star this Autumn

From March 22 to April 30, it’s 40 Days of Flavour at the Star Gold Coast and Treasury Brisbane. A dazzling line-up of ticketed events includes progressive dinners, omakase for seven diners only, long lunches, a high tea with a twist, homegrown live music and much more.

We were treated to a preview of 40 Days of Flavour on the rooftop Nineteen at The Star – high above the Gold Coast’s glitter strip. Chefs Tom Mumford, Winson Law and Uday Huja delighted guests with tantalising tastes from some of the program’s menus. Together they’re shining the spotlight on Queensland’s fine produce and dedicated food artisans.

For ten nights only, Kiyomi will present a very exclusive 18-course degustation of delight.  Created by chefs Chase Kojima and Winson Law, the menu will incorporate specially designed stunners, including tempura, caviar, and truffle wagyu, with matching wines and sake.

 

Kiyomi Chef de Cuisine Winson Law served up the dish of the night – scampi sushi. The creamiest West Australian scampi did a quick 360 on a tiny Binchō-tan grill and was garnished with a touch of light soy and ginger. (Binchō-tan is Japanese charcoal that produces virtually no flames and no smoke).

Both Kiyomi and big sister Sokyo at the Star Sydney delivers an elevated take on Japanese cuisine. Their sushi specialist’s precision with top-notch ingredients guarantees seafood flavour bombs.

For those who like it meaty: Black Hide by Gambaro Set Lunch or Dinner Degustation at Treasury Brisbane from 22 March – 30 April.
Chef Tom Mumford served up rare, thinly-sliced 9+ wagyu eye fillet and sirloin. The meltingly tender beef starred with the barest minimum of accompaniment: potato crisp, rosemary and bearnaise or horseradish cream.
Serving world-class Stanbroke beef exclusively, a steak at Black Hide by Gambaro is guaranteed to be a show-stopper.

For those who love their food with altitude – Nineteen at The Star Chef’s Showcase The Star Gold Coast | 22 March – 30 April, Friday & Saturday Lunch
American Chef Uday Huja worked across the U.S. before what he thought was a temporary stint at the Star Gold Coast. 9 years on, and he’s still amazed by Australia’s diverse produce.
Previously Chef Uday operated his own restaurant in Marfa, Texas, and ran silver service venues for high-rollers at the Mansion at the Mirage and The Signature Hotel Las Vegas. Now he loves nothing better than to introduce guests to the range of flavour profiles different marine environments bring to native Sydney rock oysters.

During 40 Days of Flavour, oysters will open the 4-course Autumn celebration. Nineteen at The Star’s signature molluscs are paired with a glass of Dominique Portet Brut Rosé. Entrees from Heirloom tomato and fig salad with sheep’s milk cheese to beef tartare, southern calamari or pumpkin risotto. For the main act – there’s Shallot Tarte Tatin, John Dory, Maple Cedar Plank Roasted Ocean Trout or Grain Fed Scotch Fillet.

And to finish? Chocolate Meringue Pie, ‘Pedro Ximenez’ Ice Cream or Coconut, Mango Panna Cotta with Smoked Macadamia Ice Cream.

And, every Thursday, The Star Gold Coast hosts an evening of fine wine and grazing across Nineteen at the Star, Garden Kitchen and Bar and Kiyomi with dessert at Cucina Vivo. Post-dinner cocktails are served at a secret location.

In Brisbane, The Lab at the Treasury is the scene of an intimate Mo​ë​t & Chandon High Tea for a maximum of just ten guests every Saturday and Sunday during the Festival.
