Murray River Salt – salt of the earth

It has been an integral part of human civilization for millennia; wars have been waged and trade routes discovered because of its enormous value. Today salt is part of everyday life. There’s also Hawaiian, Himalayan, and Italian Sea as well as Smoked Grey and Jamaican Blue. There is river, lake, sea and rock. But Australia has been producing one of the purest and flavoursome salts for 14 years – Murray River Gourmet Pink Salt. The salt of the earth.

Produced at the Mourquoung Salt Mitigation Basin northwest of Mildura on the border of New South Wales and Victoria. Concentrated brine is pumped from crystallizer ponds fed by an ancient saline waters. The salt is produced by evaporation during the long hot Australian summer. After harvesting the salt is washed and dried. The salt is its particular shade of apricot due to the minerals that naturally occur. European settlement is the overwhelming reason for one of the greatest environmental issues – salinity. Rising water tables caused by development bring salt previously underground to the surface where it effects vegetation, rivers and streams. By intercepting the salt water the company prevents between 150 and 200 tonnes of salt entering the Murray River each day.

Murray River Gourmet Salt is loved by Australia’s best-known chefs including Neil Perry, Stefano de Pieri, Giovanni Pilu and Kylie Kwong. It is also served on Qantas and in many of Australia’s finest restaurants. The delicate pink flakes are naturally high in magnesium and calcium and is preservative and additive free. The Chili Grinder Salt has chilli flakes added for a little extra zing. Truffle Salt has been infused with pieces of Western Australian Great Southern Black Melanosporum truffles and is perfect for eggs or steak and is a perfect finishing touch for risotto.   What distinguishes Murray River Gourmet Salt from the other specialty finishing salts is its clean, mild flavour. It melts quickly or if used as a garnish it delivers a wonderful crunch. And nothing looks quite as striking on a dinner table.
