Melbourne’s riverside is about to get greener—and a little more serene—with the opening of Australia’s very first 1 Hotel. Known for its eco-conscious approach to luxury, 1 Hotels brings its signature blend of sustainability, style, and soul to one of the city’s most storied waterfront sites.
Heritage
Set within the heritage Goods Shed No. 5, 1 Hotel Melbourne honours the city’s maritime past. The building’s industrial bones—restored timber, steel trusses, and bluestone pavers—have been thoughtfully preserved, while over 2,000 living plants add a timeless but contemporary edge to the historic surroundings.

Rooms
Each of the 277 rooms and suites is a tranquil retreat, with floor-to-ceiling windows framing views of the Yarra River or the city skyline. Expect reclaimed timber, moss panels, and touches of local artistry—plus thoughtful amenities from Bamford Wellness Spa, all chosen with comfort and conscience in mind.

1 Hotel Melbourne’s flagship dining destination is From Here by Mike, created in partnership with celebrated Australian chef Mike McEnearney – a Gourmand Award winner and Rockpool alumni.
Food at 1 Hotel Melbourne celebrates Victoria’s bounty. From Here by Mike’s menu is a straightforward reflection of Victoria—seasonal ingredients, simply prepared, and always respectful of where they come from. Each dish is a nod to local growers and producers, letting the quality of the produce speak for itself. It’s honest food that’s connected to the land and the people behind it.
From Here by Mike marks McEnearney’s first hotel collaboration. He is known for his ingredient-first principles and determination to reduce waste. His cooking honours the provenance of produce. Kitchen by Mike, his former Sydney eatery, caused a mini-revolution in restaurants. McEnearney now brings his signature cooking style to Melbourne.
From Here by Mike is set to open with a menu focused on sharing and straightforward flavour. Naturally seasonal, it’s designed around low-impact farming practices from properties concentrated around Melbourne. Expect wood-fired flatbread with almond ricotta and shiitake XO, pressed Meredith Farm capretto with saltbush verde, a Vintage “Galiciana” rib eye, and a twice-baked goat’s cheese soufflé with rosemary cream.

Desserts dial up the comfort with dark chocolate mousse with Davidson plum and poached quince with saffron custard.
There will be a weekly Sunday Roast with choices from wood-roasted Hazeldene Free Range Chicken, Valenca porchetta or whole Bass Strait Sirloin. Each will be paired with seasonal sides and house-made desserts like rhubarb and almond frangipane tart or Mike’s Grandmother’s Vanilla Rice Cream.
The drinks list is all about provenance, with over 40 Victorian winemakers featured alongside Australian and international producers who share a low-intervention philosophy. There’s a strong showing of textural whites, elegant reds, sparkling wines, and cocktails and spirits that keep things local.

Neighbours café will offer organic bites and artisanal treats that are ideal for riverside strolling. Crane Bar & Lounge, with its organic wines, botanical cocktails, and shared plates, is set to become a new favourite for both guests and locals.
Wellness with a Green Touch
Well-being is woven into every detail here. The Field House Gym offers state-of-the-art equipment, mindful movement classes, an indoor pool, and a sauna. Bamford Wellness Spa invites guests to slow down and recharge with holistic wellness treatments inspired by local therapies.
